Ingredients:
2 cups flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1/3 cup salad oil
2/3 cup milk
Directions:
Heat oven to 450 degrees. Measure dry ingredients into a bowl and mix well. Measure the oil and milk, mix together. Make a well in the dry ingredients. Pour the wet in all at once. Stir until the mixture forms a ball.
Now you have some options. You can drop the dough in large spoonfuls onto a baking sheet and bake for 10-12 minutes. Or, you can put the dough onto a no-stick surface and kneed in a little flour, then roll the biscuits, and cut with a cup or a knife.
Bake 10-12 minutes. Mmm.

Popovers
Ingredients:
4 eggs
2 cups milk
2 cups flour
1 teaspoon salt
Directions:
Heat oven to 450 degrees. Grease muffin cups (12-16). Beat eggs slightly, then add milk, flour, and salt. Beat until smooth, but don't over beat. Fill cups 3/4ths full. Bake 25 minutes. Lower the temp to 350 degrees and bake for 15 minutes longer, or until deep golden brown. Immediately remove from pan and serve hot. Mmm.

1/4 teaspoon nutmeg
WET:
1/3 cup butter, softened
1/2 cup sugar
1 egg
1 teaspoon vanilla
1/2 cup milk
Directions:
Heat oven to 390 degrees. Take out TWO bowls. Whisk together the dry ingredients in one bowl. Now whip the butter with the sugar in a different bowl. Add the egg and vanilla and whisk more. Add milk. Carefully pour the dry ingredients on top of the wet. Fold 10-15 times. Walk away. Fill cups 3/4ths full. Bake for 17-20 minutes. Tops should spring back lightly when touched.

Melt 1/2 cup butter. In another bowl, stir together 1 teaspoon cinnamon and 1/2 cup sugar. When muffins are done, dip the tips in the butter and then the CS-mixture. Mmm.

Marinated Lime Chicken- From Mom
MARINATED LIME CHICKEN (from Frozen Assets Lite & Easy)
6 servings
Squeeze limes into a medium sized bowl. Stir in vinegar, olive oil, basil, salt
and pepper. Place chicken breast portions into labeled freezer bags. Pour
lime sauce over top; seal and freeze.
To Serve:
Thaw completely. Pour marinade into small saucepan. Heat to boiling. Place
chicken pieces into shallow oven-proof dish. Pour boiled marinade over chicken.
Bake in preheated 350 degree oven for 35 - 40 minutes or until chicken is tender
and cooked through. Serve hot, sprinkled with fresh basil sprigs if available.

- 6 chicken breast portions (about 8 ounces each)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 4 limes (or 4 tablespoons bottled lime juice)
- 4 teaspoons white wine vinegar
- 9 tablespoons olive oil
- 2 teaspoons basil
